Cranberry // Also known as borlotti; medium-large, creamy and mild with hint of sweetness. Holds shape well when cooked.
Rojo Chiquito // A unique variety of the small red bean type popular in Central America, with a smaller seed size (similar to a black turtle) and a brilliant red hue that it holds on to even when cooked.
Cannellini // This is one of our biggest beans and is just the thing for all your bold white bean needs. Pillowy and hearty, skin thinner than a red kidney but still holds shape reliably in stewier environs.
Tiger Eye // A farmer favorite for its eye-catching seed coat and unique chestnutty flavor, with smooth flesh and thin skin. Also known as pepa de zapallo.
Orca // Smooth and firm, holds shape and notably much of its color as well, creating a silky smooth broth and eye-catching contrast on the plate.
Flor de Mayo // A small bean native to Mexico, and beloved by chefs there. Thin skinned, creamy and mild, tendency to melt into dishes when well cooked. Our shiniest bean, with speckled dark pink overlay.
Flor de Junio // A small to medium sized bean popular in Mexican cuisine. Thin skinned, creamy and mild, tendency to melt into dishes when well cooked. Similar to Flor de Mayo above, but slightly larger, thinner skinned and ray-patterned instead of speckled.
Purple Stardust // This groovy bean cooks similar to a cannellini -- mild flavored with pillowy mouthfeel and nicely held form in the pot.
Black Turtle // Classic staple bean with silky, inky broth and full flavor. Firm texture in a compact package holds together nicely in any dish.
Kidney // This classic, meaty bean shines in hearty stews and curries; available in both dark red or light red (pink) varieties.
Pinto // A crowd favorite; pintos are a medium-sized and versatile. Thin-skinned, creamy and mild.
New York lentils! This exciting new crop for our region is fall-planted and harvested mid-summer, providing many soil-building benefits along the way. Creamy and earthy, these lentils land midway between a split red and green lentil.
